Achari Palak Corn Pulav





Ingredients


1 cup basmati rice

6 tsp ghee or oil

1/2 cup corn kernels

6-8 finely slice palak/spinach leaves

2 finely sliced onions

2 tsp ginger garlic paste

2 slit green chillies

1 sp turmeric pdr

2 tsp achar ka masala powder or any achar/pickle (use only masala)

1 tsp garam masala powder (I used chana masala powder)

Salt to taste

Chopped coriander leaves




Procedure

  • Wash and soak rice in water for 20 mins

  • Heat oil/ghee in a cooker, add sliced onions and saute till they turn translucent

  • Put slit green chillies, ginger-garlic paste and fry till raw smell goes

  • Add turmeric powder, garam masala, achari masala and saute for a second

  • Put chopped palak and corn kernels with a little salt and toss for a second

  • Drain water from the rice and add to the masala and fry for 5 mins

  • Add salt to taste, mix well. Put 1.5 cups of water and close the lid

  • Cook for 2 whistles, turn off the flame

  • Once the steam is released open the cooker, gently mix with a fork and garnish with chopped coriander leaves

  • Serve hot pulav with any raita of your choice.
