Halbayi is an authentic and traditional dessert recipe made with rice and jaggery. Basically, it is one of the popular delicacies from the Udupi and Mangalore cuisine and is generally made for occasions and celebration feasts. it is very simple and easy to make as it contains very basic ingredients like rice, jaggery, and coconut.
Ingredients
1/2 cup dosa rice or sona masoori
1/2 cup grated fresh coconut
1/2 cup jaggery
6 tsp ghee
2 tsp cardamom powder
7-8 cashew nuts(optional)
Procedure
Soak rice in water for 3-4 hrs
Wash rice and grind with coconut, cardamom powder into a fine paste using 1/4 cup water
Heat a thick bottomed pan, put 1 .5 cups water,2 tsp ghee, jaggery to it, once the jaggery is completely dissolved in water lower the flame
Now add the ground paste to the jaggery water, keep on stirring the mixture ensuring no lumps are formed
Add another 3 tsp ghee while stirring the mixture
Once the mixture caves together and leaves the sides of the pan,t is done
this step may take around 30- 40 mins
Take a plate, grease it with ghee and pour the mixture into the plate and spread evenly
Put the chopped cashew nuts, let it cool, and then cut into the desired shape
Serve chilled.
