Super delicious Almond Butter Cookies made with just 4 ingredients. It's a healthy cookie recipe made of wheat flour and jaggery.
Ingredients
1/2 Cup Wheat flour or Atta
50 grams salted Butter (1/4 Cup)
3 Tbsp Jaggery powder
1/2 tsp Baking powder
1 Tbsp Milk
Procedure
Take wheat flour in a bowl. Add cold butter, directly out of the fridge, cut it into small cubes.
Mix with your fingertips till the butter and wheat flour mix well resembling coarse texture. ( Make sure there are no large chunks of butter and all the butter has been incorporated well into the wheat flour)
Now add baking powder and jaggery powder to this. Seive it if the baking powder or jaggery powder has big granules.
Mix once really well. Then add milk and bring the dough together. The dough will be a little sticky. Refrigerate the dough for at least 15 minutes.
Preheat the oven at 180 C for 10 mins. Remove the dough from the fridge and make small balls out of it. Flatten it and cut using cookie cutter into different shapes. Place them on a greased ( generously with ghee or butter ) ovenproof tray.
Bake in the center rack of your OTG at 180 C for 10 to 12 mins. The sides of cookies will turn slightly brown and the surface will change color to pale golden. The center surface of the cookies will also be hard and not soft. If you bake for more than 12 minutes it will turn crispy.
Allow it to cool down. It will harden as it cools. Initially, it will be very soft but will turn crispy as it is kept at room temperature. Enjoy the cookies!
