Alu Baingan






Ingredients

5 small variety brinjals/baingan

1 capsicum

1 potato

1 chopped tomato

Salt to taste

chopped coriander leaves


For the masala :

2 tblsp coriander powder

1 tblsp cumin/jeera powder

1 tsp amchur or tamarind juice

1/2 tsp garam masala powder

1 tsp sambar powder

1/2 tsp turmeric powder

5 crushed green chillies

Dry roast 3 tblsp peanuts and 2 tblsp white sesame seeds and make powder

2 tblsp chopped coriander leaves

Pinch of sugar

Salt to taste

Mix all the above ingredients with little water and make a thick paste and this is the stuffing for brinjals


For the tempering:

5 tsp oil

1 tsp mustard

1 sprig of curry leaves





Procedure

  • Wash and slit the brinjal and keep in water

  • Peel the potato and cut into big pieces and cut the capsicum into big chunks

  • Stuff the brinjals with the masala paste

  • In a cooker put the oil, add the tempering ingredients one by one, Once it is ready to add chopped tomato and fry for 5 mins

  • Add the stuffed brinjals, potato and capsicum cubes, salt, sugar 1/2 cup water and close the lid

  • Cook for one whistle and your bharwa baingan is ready

  • Open the lid of the cooker, garnish with chopped coriander leaves and mix well

  • Serve hot with any rotis.
