Ambya upkari / Mango curry is a famous dish of the G.S.B’s prepared during the mango season that is during the summer season. This curry is prepared with the special mangoes which we get during the season known as Goint Ambo which is small in size and the seed has fibers that are used to seep the juice of the curry which is the specialty of the mangoes. Goint Ambo is the local Mangoes that has a sweet and sour taste.
Ingredients
8 small variety mangoes (specially meant for making this curry)
3 green chillies slit
Jaggery to taste
Salt to taste
2-3 tsp maida
For the tempering:
3 tsp oil
1 tsp mustard
2 sprigs of curry leaves
2 red chillies cut into bits
Procedure
Wash and deskin the mangoes, add water to the peel, and rub thoroughly till all the pulp from the peel is removed
Add this water to the de-skinned mango. Add salt, slit green chillies, jaggery, and boil well
Once the mangoes are cooked, mix maida in 1/4 cup water and add it to the curry, stir continuously until the curry thickens.
Cook for 2- 3 mins and turn off the flame.
Add the tempering to the curry and your mango curry is ready to eat.
