Andhra Style Chicken Biryani





Ingredients


1 cup basmati rice wash and soak in water for 20 mins

5 tsp ghee or oil

whole spices like

2 lavang/clove

1/2 inch cinnamon/dalchini

1 bay leaf

1/2 tsp peppercorns

1black cardamom/ badi elaichi

Salt to taste


Ingredients for the masala:

3 chicken leg pieces

3tblsp curds

1 tsp turmeric powder

1 tsp coriander powder

1/2 tsp cumin powder

1/2 tsp pepper powder

2 tsp red chilli powder

1 tsp biryani masala

Salt to taste

Wash and clean the chicken and marinate with the above-mentioned ingredients for minimum of 20 mins

Make a paste of :

5-6 mint leaves

2 green chillies 1/4 cup coriander leaves 5 garlic cloves 1/2 inch ginger 5 tsp oil 2 chopped onions




Procedure


  • To make rice, heat ghee/oil in a cooker, add whole spices and saute for 2mins

  • Drain water from rice and add to it and fry for 5 mins

  • Add salt,1 1/2 cups water, close the lid

  • Cook for only 2 whistles.

  • In a pan heat oil, saute onion slices till light brown in colour

  • Add the masala paste and fry till it loses raw smell

  • Add marinated chicken and cook till chicken becomes tender

  • Add little water only if needed

  • Once the chicken masala becomes dry add the cooked rice, lime juice, and toss well

  • Garnish with fried cashew, coriander leaves and serve hot with any raita of your choice.
