Anjeer and Khajoor Barfi

Ingredients


1 cup dried figs/anjeer

1 cup deseeded dates/khajoor

15 almonds/badam

15 kaaju/cashew nuts

1/4 cup pumpkin seeds

10 pistachios

1 tsp ghee

1/4 cup tiny cashew bits or khus khus



Procedure

  • Chop finely dates and figs and keep aside

  • Chop almonds, cashew nuts, pistas and toast them separately

  • In pan heat ghee, add chopped anjeer and dates, and mix well stirring continuously for 5 mins 

  • Turn off the flame and transfer it to a plate

  • Add the toasted nuts to  the dates and anjeer mixture, combine well

  • Shape it into a cylinder as shown above

  • Roll it in toasted khus-khus or cashew bits (this is optional)

  • Leave it for 15 mins and then cut into discs 

  • Store in an airtight container
