Appam Dosa






Ingredients


2 cups dosa rice

1 cup idli rice/Selam rice

1/2 cup coconut gratings

1/2 tsp cooking soda or ENO fruit salt

Salt to taste

Oil for cooking dosa




Procedure

  • Soak both rice in water for 6-7 hours. Wash well and grind with coconut gratings, into a smooth paste.

  • Take a small cup of batter in a pan , add one cup of water to it and mix it nicely.

  • Cook the batter till it forms a smooth paste and changes its color.

  • Turn off the flame, let it cool. Add it to the ground batter once it becomes cool.

  • Mix well and keep the batter covered. Let it ferment for 7-8 hours or overnight.

  • Next day before making dosa add salt and cooking soda. Mix well. Dosa batter consistency should be semi-thick.

  • Heat dosa pan and add a ladle of batter and just spread a little. Drizzle with a spoon of oil, and cook covered with a lid on a medium flame.

  • Once it is done serve hot with chutney, sambar, or Saagu.
