Ashthami Laddu

These delicious laddus are mostly prepared by Mangalorean’s for the occasion of Krishna Janmashtami as an offering to Lord Krishna. It is made with puffed rice powder, jaggery, Sev and black sesame. It is the main sweet on the occasion of Janmashtami. So the name Ashthami laddu.



Ingredients


1cup layi pitto/ araLu Pudi/puffed paddy rice pdr

4 tblsp chopped and dry roasted cashew nuts

3 tblsp dry roasted black sesame seeds

2 tsp cardamom powder

1 cup chikki jaggery/antu bella


For mota sev/karo:

1 cup besan/bengal gram flour

Ghee/ oil for frying





Procedure


  • Mix gram flour/ besan with water and make a thick paste

  • Put in the sev mold and make sev , deep fry till they are crisp

  • Once they are cooled crush them with your hands and make small pieces

  • In a bowl keep ready mixed puffed paddy rice powder, cardamom powder,sev,cashew nuts, and sesame seeds

  • Heat a pan, put jaggery and 1 cup water and make it boil,stirring continuously

  • To check the thread consistency put a drop of syrup in a small bowl of water it should form a ball

  • Once you get this consistency remove from the flame and add all the ingredients and mix well

  • Grease your hands with ghee and make laddus and store in an air-tight container when it comes to room temperature.
