Avakaya

Mango avakaya or avakaya pickle is a spicy, robust pickle made with raw mangoes from the Andhra cuisine. Andhra cuisine is known for its spicy as well as tasty recipes. This pickle is also no different and is one of the gems from Andhra cuisine.




Ingredients

Medium-sized raw mangoes 4

2 tbsp oil

1 tbsp fenugreek seeds/ methi

Asafoetida one small piece

3/4 cup mustard seeds

40 red chillies

1/2 tsp turmeric

6 tbsp salt




Procedure


  • Fry the ingredients no 3 to 6 in little oil separately and make a little coarse powder

  • Wipe mangoes and cut them into pieces

  • Mix each piece in the masala and fill them in the cleaned glass jar

  • After 3 days open the jar and mix well and pour the 3/4 oil and again mix it

  • Pour the remaining oil on the top of the pickle and close tightly

Note: If you want to add garlic then fry around 25 garlic cloves in the oil and add to the pickle on the third day when it comes to room temperature and Mix well.
