Avarebele Masala Vada is a crispy deep-fried Indian snack made with avarekalu or Hyacinth Beans. They are crispy outside and soft inside. The main ingredient is avarebele or surti papdi and we don’t need any other flour or anything to bind the batter. I have used ginger, green chilies, cumin seeds, coriander leaves, and onion to make them delicious. They are super crispy outside without rice flour. You can also add some curry leaves if you would like to.
Ingredients
1/2 cup hidkida avarekaalu / hyacinth beans (soaked and deskinned)
1 cup chana dal
2 tblsp urad dal
2 onions finely chopped
4-5 green chillies
2 red chillies
2 sprigs of curry leaves
1/4 cup chopped mint leaves
1/4 cup chopped coriander leaves
Salt to taste
Oil for deep frying
Procedure
Soak chana dal and urad dal in water for 2-3 hrs, drain water and grind dal with green chilies, red chilies, salt, and 3/4 portion of the hyacinth beans
Grind into a coarse paste, transfer it into a bowl
Add chopped onions, remaining hyacinth beans, chopped curry leaves, mint and coriander leaves
Mix well, make vadas, and heat oil
Deep fry the vadas into crispy ones on a medium flame
Serve hot with coffee or tea.
