Baby Corn Biryani





Ingredients

1 cup basmati rice

6 baby corn slit lengthwise

1/4 cup green peas

2 sliced onions

whole garam masala like 2 cloves, cinnamon,1 cardamom,1 bay leaf

5 tsp ghee or oil

Salt to taste Chopped coriander and mint leaves for garnishing


For the green paste:

3 tbsp coriander leaves

1 tbsp mint leaves

2-3 green chillies

3 garlic cloves

1/2 inch ginger

grind the above into a fine paste


For marination:

Marinate the slit corn and green peas with green paste,1/4 cup curd,1/2 tsp turmeric pdr,1/2 tsp red chilli pdr,1 tsp biryani masala, salt and keep for 15 mins.




Procedure

  • In cooker heat oil add whole garam masala, onion slices and saute for 5 minutes

  • Put the marinated corn and peas and fry for 5 minutes

  • Put the soaked rice and fry for some time

  • Add salt to taste,1 1/2 cups water and close the lid

  • Switch off the gas after 2 whistles

  • After the steam is released Gently mix with a fork and garnish with fried onion slices, cashew nuts, chopped coriander and mint leaves

  • Serve hot with raita.
