Ingredients
1 cup basmati rice soaked in water for 30 mins
10 baby potatoes parboiled
2 onions sliced
6 tsp ghee or oil
1 cardamom
2 cloves/lavang
1 piece of cinnamon/ dalchini
1 bay leaf / tej patta
1/2 tsp turmeric / haldi pdr
2 tsp biryani masala pdr
1 tsp lemon juice
Salt to taste
For the masala paste:
1/2cup coriander leaves
8-10 mint leaves
2 green chillies
1/2 onion roughly chopped
5 garlic cloves
1/2 inch ginger
Procedure
Peel the boiled potatoes, add a little salt and 1 tsp red chilli pdr, mix well and roast the potatoes till its outer cover becomes light brown and keep aside
In cooker, add oil put cardamom,lavang, cinnamon, bay leaf, fry for a second and add sliced onions
Fry onion slices till translucent, followed by masala paste
Fry the masala till the raw smell goes, add turmeric pdr, biryani masala pdr and fry for a minute
Drain water from the soaked rice and add it to the fried onion slices, fry for 5 mins
Add salt to taste,1.5 cups water, lemon juice and mix well
Close the lid of the cooker and cook for 2 whistles
Once the steam is released open the lid and gently mix the roasted potatoes
Serve hot with raita.
