Ingredients
Baby potatoes 20 nos
5 tsp oil
2 sprigs curry leaves
chopped coriander leaves
CHING'S SCHEZUAN CHUTNEY 4 tblsp
1 tsp soya sauce
1 tsp pepper powder
1/2 tsp red chilli powder
Salt to taste
For the marination:
1 tsp lemon juice
1 tsp salt
1/2 tsp turmeric powder
For the masala:
2 roughly chopped onions
5 garlic cloves
1/2 inch ginger piece
1 green chilli
Crush these ingredients coarsely and keep aside (run the mixer for only one second. Don't make a fine paste)
Procedure
Boil the potatoes (don't overcook)
Peel the potatoes and marinate with the above ingredients and keep for 10 mins.
Heat oil in a non-stick pan and add the masala and fry for 5-10 mins
Add marinated potatoes, soya sauce, pepper powder, salt to taste, chings schezuan chutney and red chilli powder and toss well
Garnish with chopped coriander leaves and fried curry leaves
Serve hot with rice or phulkas.
