Baby Potato Schezuan Fry





Ingredients

Baby potatoes 20 nos

5 tsp oil

2 sprigs curry leaves

chopped coriander leaves

CHING'S SCHEZUAN CHUTNEY 4 tblsp

1 tsp soya sauce

1 tsp pepper powder

1/2 tsp red chilli powder

Salt to taste


For the marination:

1 tsp lemon juice

1 tsp salt

1/2 tsp turmeric powder


For the masala:

2 roughly chopped onions

5 garlic cloves

1/2 inch ginger piece

1 green chilli

Crush these ingredients coarsely and keep aside (run the mixer for only one second. Don't make a fine paste)




Procedure


  • Boil the potatoes (don't overcook)

  • Peel the potatoes and marinate with the above ingredients and keep for 10 mins.

  • Heat oil in a non-stick pan and add the masala and fry for 5-10 mins

  • Add marinated potatoes, soya sauce, pepper powder, salt to taste, chings schezuan chutney and red chilli powder and toss well

  • Garnish with chopped coriander leaves and fried curry leaves

  • Serve hot with rice or phulkas.
