Ingredients
1 medium-sized bitter gourd/karela/ hagalkaayi
3-4 tsp oil
2 tbsp fine rava/semolina or rice flour
For the chilli paste:
1 tbsp rice flour
2 tbsp red chilli powder
1/2 tsp hing/asafoetida powder
Salt to taste
Mix all these ingredients and make a thick paste.
Procedure
Wash karela, cut the ends and scrape the outer skin.
Cut into thin roundels. apply little salt and keep aside for one hour
After one hour wash the karela slices, squeeze out all the water from them
Marinate the karela slices with the paste as per your taste. Add 2 teaspoons of oil and give a good mix.
Meanwhile, preheat the oven for ten minutes.
Roll each slice in rice flour or semolina, dust the extra flour.
Arrange all the karela slices on a greased baking tray
Drizzle the slices with the remaining oil and bake them in preheated oven for 20 to 30 minutes or till it turns crisp, at 200 degrees C
In between flip the slices and bake both sides.
Enjoy with hot rice and dal.
