Batate Bhajjunu Upkari

Potato stir fry can be served as a side with rice and dal or even with Indian bread. This is known as batate bhajun upkari in konkani. Batate means potato and bhajun upkari means stir fry. This is prepared in less than 20 minutes and is loved by people of all age group.






Ingredients

3 medium-sized potatoes

2 tbsp oil

1 tsp mustard

4 dry red chillies

Salt to taste




Procedure

  • Peel the potatoes and cut them into small thin slices. Wash them well and drain all the water.

  • Add salt to the potato slices, mix well and keep aside for 20 minutes.

  • Heat oil in a thick bottomed pan (preferably cast iron kadayi), add mustard.

  • Once it starts crackling add red chillies cut into bits. Squeeze water from the potato slices and add them to the pan.

  • Give a nice mix and cook with a lid covered. (no water is added to this)

  • Once the potatoes are almost done open the lid and roast it on a medium flame, till it turns slightly crisp and brown.

  • Serve immediately with hot rice and dal.
