Begun Bhaja/Tawa fried Eggplant

Bengali Begun Bhaja or Baingan Bhaja is a dish prepared out of thick slices of eggplant marinated in spices and coated with rice flour and deep-fried or tawa fried. It goes perfectly with rice and dal and even phulka.






Ingredients

1 large eggplant / baingan/ brinjal

1 tsp turmeric powder/ Haldi

1 tsp red chilli powder

1 tsp lemon juice

2 tbsp rice flour or besan

Salt to taste

Oil for roasting bhaja




Procedure

  • Wash baingan, cut the stem, and cut into 1/4 inch slices. Apply little salt to the slices, mix well and keep.

  • Combine chilli powder, turmeric powder, lemon juice, salt, and besan/rice flour in a bowl.

  • Add little water and make a thick paste. Apply the paste on the slices roll them in rice flour.

  • Heat tawa and arrange the slices on it. Drizzle them with oil and cook them on both the sides till it turns crisp and golden brown.

  • Serve baingan bhaja immediately with rice and dal.
