As you already knew Andhra Homes never complete a meal without a spoonful of freshly prepared vegetable chutneys. Here is a spicy, tangy, and super tasty Vendakkai pachadi / Lady's finger chutney. Super tasty with hot rice and rasam.
Ingredients
1/2 kg lady's finger/okra/Bhindi
15-18 green chillies
2 roughly chopped onions
25 gms tamarind
Salt to taste
1/2 tsp turmeric powder
4-5 tbsp oil
1tsp each mustard, urad dal,chana dal and jeera
15 garlic cloves
3-4 red chillies
Procedure
Wash and wipe the bhindis. Cut the ends and chop finely.
Deep fry or shallow fry the cut bhindi, till it becomes slightly crisp or the color changes
In another Kadai fry onions and green chilies in a spoon of oil.
Grind the fried onions, green chilies, and Bhindi, with a spoon of jeera, salt, turmeric, and tamarind to a rough consistency, without adding water.
Transfer it into a bowl. To this add the tadka/tempering of mustard, jeera, urad dal. chana dal, curry leaves, garlic cloves, and red chillies.
You can also add a pinch of hing/asafoetida.
Serve chutney with hot rice and rasam.
