Ingredients
250 gms bhindi / Lady's fingers/ okra
6 tsp oil
1 tsp mustard
Curry leaves
1 finely chopped onion
1/2 tsp tamarind paste
1/2 tsp turmeric powder
2 tsp red chilli powder
1 tsp coriander powder
1/2 tsp cumin powder
Salt to taste
Chopped coriander leaves
For the masala paste:
2 tbsp dry roasted peanuts
2 tbsp dry roasted sesame seeds/ til
3 tbsp dry or fresh coconut roasted till light brown
Grind the above-roasted ingredients into a fine paste
Procedure
Wash and wipe the bhindis, cut the ends and cut into 2-inch pieces
In a pan heat 1 tsp oil add the cut bhindis with 1/2 tsp salt and saute till it is cooked
Transfer it to a bowl, add the remaining oil to the same pan, put mustard
Once the mustard starts crackling, add curry leaves, chopped onions and saute till it becomes transparent
Add the masala paste and all the spice powders one by one
Saute for 2 mins, add tamarind paste, salt to taste and 1/2 cup water
Add the roasted bhindis and let it boil for 5 mins
Check for the salt and turn off the flame, garnish with chopped coriander leaves and serve hot with Rotis.
