Ingredients
250 gms bhindi (okra/ladyfinger)
2 tsp +4 tsp oil
3 finely chopped onions
1 finely chopped tomato
3 tsp chilli powder
Salt to taste
Procedure
Wash and wipe bhindis and cut into 1-inch pieces
In a pan put 2 tsp oil and fry bhindi pieces with a little salt
Keep covered till bhindi is cooked
Transfer it to a bowl
In the same pan put the remaining oil and fry 1/2 portion of chopped onion till dark brown in colour
Add the remaining onion and fry for 5 minutes
Put the chopped tomato and fry till it becomes soft
Add chilli powder and fry for 2 minutes
Put the fried bhindis, salt to taste and sprinkle little water and cook for 5 minutes
You can also use tamarind pulp instead of tomato
