Ingredients
250 gms bhindi/ lady's fingers/ okra
2 tsp +5 tsp oil
2 finely chopped onions
1 clove, small cinnamon piece
1 tsp ginger garlic paste
1/2 tsp turmeric pdr
2 tsp garam masala(I used malwani masala)
1 tsp red chilli pdr
2 tblsp fresh cream
2 tsp Kasuri methi
Salt to taste
Chopped coriander leaves
To make the paste:
2 tomatoes blanched
8 pistas or cashews
Procedure
Wash, wipe the bhindis, cut the ends and cut into 1-inch pieces
In a pan put 2 tsp oil, put the cut bhindi, little salt, and fry till it is cooked(You can also deep fry the bhindis)
Transfer the bhindis into a bowl, in the same pan put the remaining oil, add clove, cinnamon, chopped onions and fry till it becomes transparent
Add ginger-garlic paste and fry for 5 mins
Put the tomato paste and fry till oil leaves the sides
Add the spice powders one by one and fry for 5 mins
Now add the fried bhindis, little water, salt to taste, and cream
Give a quick boil, adding Kasuri methi, garnish with chopped coriander leaves
Serve hot with hot phulkas.
