Ingredients
3 dry red chillies
2 tblsp coriander seeds/ daniya
1 tblsp cumin seeds/ jeera
6 bay leaves/ tej patta
1 tblsp caraway seeds/ Kala jeera/ shahi jeera
2 mace/ javitri
2-inch piece cinnamon/ dalchini
1 nutmeg / jaiphal
1 tsp cloves/ lavang
3 badi elaichi / black cardamom
3 star anise/chakra phool
8 green cardamom / elaichi
1 tblsp pepper / kaali mirch
1 tsp saunf/ fennel seeds
1/2 tsp turmeric/ haldi
Procedure
In a thick bottomed Kadai roast red chillies and bay leaf, till they turn crisp. Keep it aside.
Dry roast all the other ingredients (except turmeric powder) till they turn aromatic.
Allow it to cool and transfer it to the blender, add turmeric powder.
Blend the ingredients into a fine powder and transfer it to an airtight container.
Store in an airtight container and use it for making biryanis or pulav.
