Ingredients
2 cups sugar
1 cup water
1 1/2 cups besan/Bengal gram flour
1 tsp cardamom powder
few saffron strands
oil for deep frying
2 tsp ghee
yellow food colour(optional)
Procedure
In a Kadai put water, sugar and keep on a medium flame and boil it till you get the one thread string consistency
Put off the flame and add Kesar, cardamom powder, color, and ghee
Simultaneously in another Kadai keep enough oil to fry boondi.
Mix besan with enough water to make a thick batter of dropping consistency
Now take a big spoonful of the batter and pour it through a boondi making pan into a medium heat oil
Take out boondis after 2 mins, they should not be crisp
Put the boondis into the sugar syrup, keep doing this till all the batter is used up
Keep stirring boondis in syrup intermittently
The mix will thicken in 30-40 mins and then make ladoos.
