Broccoli Rice





Ingredients


2 cups cooked rice

1 small broccoli

5 tsp oil

1 tsp mustard

2 tsp jeera/cumin seeds

5 garlic cloves finely chopped

2 sliced onions

4 slit green chillies

2 tblsp cashew bits

chopped coriander leaves

Salt to taste




Procedure

  • Cut the broccoli into florets and blanch it or micro it with little water and salt for 20 mins or till it is cooked

  • In a pan take oil, add mustard, when it starts crackling, add jeera, green chillies , garlic cloves and fry till garlic becomes light brown

  • Add cashews, chopped onions and fry till onion becomes transparent

  • Put the broccoli florets and saute for 2-3 mins, followed by cooked rice, salt to taste

  • Toss well, garnish with chopped coriander leaves and serve with any raita or curry.
