This is a part of Tamilnadu cuisine!! KATHIRIKAI is also called BRINJAL, BAINGAN OR BADANE KAYI..Stuffed brinjal always goes well with rotis or sambar rice too.

Ingredients
8 baby brinjals
2 chopped onions
1 chopped tomato
4 tblsp oil
1 tsp mustard
Turmeric powder
Salt to taste
Corriander leaves for garnishing
For the masala:
3 tsp onion
1/2 cup grated coconut
4 red chillies (roasted)
1/2 inch ginger
3 cloves garlic
1 handful roasted peanuts
1/2 tsp turmeric powder
1 1/2 tblsp sesame seeds (til)
Procedure
Wash and make cuts in brinjals and keep in saltwater
grind masala to a fine paste
Stuff the brinjals with the masala
In a pan take oil to add mustard, curry leaves, and chopped onions, and fry for 5 minutes
Add turmeric powder and chopped tomato and fry
Put stuffed brinjals and remaining masala, salt to taste, and 1/2 cup water
Cover with a lid and cook till the brinjals become soft.
Serve hot with rice or roti.
