Coconut Jaggery Barfi / Kobbari Mithayi

Nariyal and gur ki burfi/ Coconut Jaggery Barfi /Kobbari Mithayi is another really easy Indian sweet recipe that you can make at home easily. It only requires few ingredients and little time. Coconut and jaggery both have so many health benefits thus this is one of the healthy sweet recipes. We have not used any sugar in it, used the jaggery instead which make it more flavourful and interesting.








Ingredients

1 cup finely grated coconut (take only white part)

3/4 cup sticky jaggery/Chikki gud /Antu bella

1 tbsp roasted white sesame seeds/til (optional)

2 tsp ghee

1 tsp cardamom powder




Procedure


  • Firstly grease one tray with little ghee and keep ready.

  • If the coconut gratings are not fine then put it in the mixer jar and just crush it once without water.

  • Put the coconut gratings in a pan and slightly roast it for 5 minutes. Transfer it into a bowl and keep it aside.

  • In the same pan, put jaggery and 1/4 cup water and make it boil, stirring continuously.

  • Once the jaggery syrup turns thick, to check the thread consistency put a drop of syrup in a small bowl of water it should form a ball

  • Once you get this consistency, add 1 tsp ghee, sesame seeds, and coconut gratings.

  • Mix it continuously without leaving your hand on a low flame

  • Cook until the entire mixture comes together or starts to leave the sides of the utensil, about 15 to 20 minutes. Stir in the cardamom powder.

  • Spread on a plate and cut into squares. You can decorate with cashewnuts or any other nut of your choice.

  • Store in an airtight container, once it comes to room temperature.
