Congress Kadlekai is the quintessential Bengaluru snack. The recipe is quite simple: it’s split Groundnuts (also called Peanuts) – de-skinned, roasted, and spiked well with a tangy spice mix and garnished with fried up curry leaves. A very healthy snack, it has its origins in the Iyengar bakeries dotted across old Bengaluru that were an integral part of the city’s culture, but now slowly getting replaced with hip cafés and eateries.
Ingredients
1 cup peanuts
2 sprigs of curry leaves
2 tsp oil
1/2 tsp turmeric powder
2 tsp red chilli powder
1/2 tsp pepper powder
1/2 tsp asafoetida / hing powder
Salt to taste
Pinch of sugar
Procedure
Dry roast peanuts in a pan till it becomes crisp or micro it for 6-7 mins
Cool it and remove the skin
Dry roast curry leaves till crisp and crush them with your hands
Mix both roasted nuts and curry leaves and keep
In a bowl mix chilli pdr, turmeric pdr, salt and pepper pdr
In a pan take oil add hing, stir for few seconds, switch off the gas and add the masala powder mix
Then add the nuts, curry leaves mix
Switch on the gas and roast the nuts on a slow flame for 5 mins
Store in an airtight container once it comes to room temperature
Enjoy with a hot cup of tea or coffee.
