Coriander Rice






Ingredients


2 cups cooked rice

1/4 cup corn kernels

1/4 cup green peas

Salt to taste

2 tsp lime juice


For the tempering:

4 tsp oil

1 tsp mustard

curry leaves

1 sliced onion


For the green masala paste:

1/2 cup coriander leaves

3 green chillies

1/2 inch ginger

5 garlic cloves---grind these into a fine paste and keep aside




Procedure

  • In a pan heat oil, put mustard

  • when it starts crackling, add curry leaves, sliced onion and saute for 5 minutes

  • Put the ground paste and fry well

  • Add corn kernels and peas, and cook for 5 minutes with a lid covered.

  • Put the cooked rice, salt and lime juice and stir well

  • Garnish with chopped coriander leaves and serve with raita.
