Cream of Mushroom Soup

Ingredients


4 button mushrooms, washed and finely chopped

2 tbsp butter

1 finely chopped onion

5 finely chopped garlic cloves

3 tsp maida

2 cups water or veg. stock

1 cup milk

2 tbsp fresh cream

1 tsp crushed peppercorns

Salt to taste

2 tbsp finely chopped spring onion greens




Procedure

  • Heat butter in a pan, add chopped garlic, onion and saute till it becomes light pink in color

  • Add the chopped mushrooms and saute till they shrink and cooked

  • Add in maida and fry continuously for 3-4 mins, followed by water or veg. stock and mix well

  • Once it starts boiling add salt, milk, and cream and let it boil.

  • Turn off the flame, garnish with pepper and spring onion greens

  • Serve hot.
