Lightly spiced Khichdi with soft cooked rice and lentils with a creamy tangy yogurt-based hot kadhi is comfort food. Perfect for all age groups this gluten-free meal is easy to make and needs just a handful of basic ingredients. In this Khichdi recipe, spinach paste is used to make it more healthy and tasty.
Ingredients
Ingredients for kadhi:
1 cup curd
2 cups water
1 1/2 tblsp besan/ gram flour
1/4 tsp turmeric powder
Salt to taste
For the tempering:
2 tsp oil or ghee
1 tsp cumin seeds/ jeera
1/4 tsp hing/ asafoetida powder
1/4 tsp turmeric powder
1 chopped green chilli
1/4 tsp red chilli powder
2 dry red chillies
Ingredients for palak khichdi:
1 cup rice
1/4 cup moong dal
1/2 cup palak puree(blanch palak and 2 green chillies and make puree)
1/4 cup green peas
4 tsp oil
1 tsp jeera/ cumin seeds
1 chopped onion
1/4 tsp turmeric powder
Salt to taste
For the tempering:
2 tsp ghee
2 broken red chillies
1 tsp jeera/cumin seeds
Procedure
To make kadhi Mix the above-mentioned ingredients in a bowl, whisk till it becomes a smooth mixture without any lumps
In a pan heat, oil put all the ingredients one by one,pour the curd, besan mixture
Let it boil for 5 mins, check the salt and garnish with chopped coriander leaves
To make khichdi Wash dal and rice twice and soak in water for 10 mins
In cooker put oil, add jeera, onion chopped and fry for 2 mins
Add turmeric pdr and palak puree and fry for 5 mins
Put the dal, rice mixture, green peas, salt to taste and mix well
Add 3 cups water and cook for 2-3 whistles
Open the cooker lid and add the tempering to the khichdi
Garnish with chopped coriander leaves and serve hot with pickle and kadhi.
Serve hot khichdi with kadhi, pickle and papad.
