Dhaba Style Aloo Matar





Ingredients

1 cup fresh green peas/ matar

1 potato cut into cubes

2 tsp oil

1 tsp jeera/ cumin seeds

1/2 tsp turmeric powder/ haldi

1/4 tsp hing/ asafoetida powder

1.5 tsp red chilli powder

Salt to taste


For the masala:

3 tsp oil

1 tsp ginger garlic paste

1/4 cup onion paste

1/4 cup tomato puree

2 tblsp finely chopped fresh methi

2 tblsp finely chopped palak/spinach leaves

1 tsp cumin powder

1 tsp coriander powder

1/2 tsp garam masala

Salt to taste

Chopped coriander leaves




Procedure

  • In a cooker put 2 tsp oil, add hing, jeera and fry for a second

  • add turmeric powder, red chilli powder, saute for a second, add green peas, potato cubes, salt to taste and 1/2 cup water

  • Mix well and cook for 2-3 whistles

  • In another pan put 3 tsp oil, add ginger garlic paste and fry for 2 mins

  • Add onion paste and saute till raw smell goes

  • Add the chopped methi and palak and fry for 5 mins

  • Add the tomato puree and fry till oil leaves the sides of the pan

  • Now add the spice powders and saute for 2 mins

  • Add the boiled aloo and matar, salt to taste and water if needed and mix well

  • Let it boil for 5 mins, garnish with chopped coriander leaves

  • Serve hot with poori, naan or parathas.
