Dink Laadu / Antinunde

Dink is an edible gum, which is also called Gondh in Hindi or Antu in Kannada. These laddus are very nutritious as dry fruits and jaggery is used in it and they provide a good dose of vitamins and minerals. This edible gum produces heat in the body hence this is also generally eaten as a winter food. This gum is available in the form of crystals that puff up when roasted or fried in ghee.







Ingredients

1 cup jaggery

1/2 cup grated dry coconut or desiccated coconut

2 tsp ghee

2 tblsp edible gum

2 tblsp chopped cashew nuts

2 tblsp chopped almonds

2 tblsp chopped walnuts

2 tblsp raisins

2 tblsp khus khus

8 deseeded dates finely chopped

1 tsp elaichi/ cardamom pdr

1/2 cup water





Procedure

  • Dry roast coconut till it turns into light brown colour

  • Heat ghee in a pan and fry the gum till it puffs up like popcorn, remove it a plate and crush it

  • In the same pan roast all the nuts one by one, till it becomes crisp and brown, transfer on a plate

  • Roast raisins and dates only for a second and transfer on the same plate

  • Take jaggery and water in a kadhai and bring it to boil, till you get a sticky syrup

  • Switch off the flame and add all the dry fruits into the syrup, mix well

  • Grease your hands and make laddus.
