Gharayi is a traditional GSB style payasam that is prepared with ripen jack fruit and coconut milk sweetened with jaggery. It is typically a coastal sweet dish with a strong influence of Kerala and is a delicacy relished by the GSBs sometimes during feasts. No artificial coloring or flavoring is added to this. This is the season for weddings. It is also high season for jack fruit.
Ingredients
5 ripe jackfruit segments cut into pieces
2 cups coconut milk
2 tsp rice flour
Jaggery to taste
1 tsp cardamom powder
Nuts and raisins roasted in ghee for garnishing
Procedure
In a pan take 1/4 cup water and jackfruit pieces and cook till they become soft
Once they are cooked add jaggery, cook till jaggery melts
Add coconut milk and make it boil for 5-10 minutes
Mix rice flour in little water and make a smooth paste and add to the payasam.
Keep stirring continuously till it boils and becomes thick
Garnish with nuts and cardamom powder
Serve hot.
You can substitute rice flour with Rava/ semolina.
