Amla Rasam or Indian Gooseberry/Nellikai Rasam is a mildly spiced healthy rasam (South Indian soup-like broth) made from wholesome gooseberries full of nutrients and vitamins. Enjoy this with a bowl of hot steamed rice or as a light and healthy soup any time.
Gooseberry or amla as it is called in north India or Nellikai in south India is a powerful superfood and a powerhouse of nutrients. It is rich in Vitamin C, iron, calcium and can be consumed raw, juiced, or in pickles, jams, rasam, soups, etc.
Ingredients
5-6 Gooseberries /Amla / Nellikaayi (you can use fresh or brined Amla)
Salt to tasteJaggery to taste (optional)
Chopped coriander leaves for garnishing
For the masala:
1/2 tsp jeera/cumin seeds
1/2 tsp Dhaniya / coriander seeds
5-6 black Peppercorns/Kali Mirch
1-2 dry red chillies
1/2 tsp Toor dal /Yellow split pigeon peas
For the tempering:
2 tsp ghee
1 tsp mustard
1/4 tsp Hing/Asafoetida powder
1/2 tsp turmeric / Haldi powder
Few Curry leaves
Procedure
Boil amla in cooker with 1/2 cup water. Once they are cooked, open the cooker, let it cool.
Once they are cooled, deseed them and keep them aside.
In a wok dry roast Daniya, jeera, pepper, and red Chillies till you get a nice aroma.
Grind boiled amla with the roasted ingredients,1/2 inch ginger piece, and make a smooth paste.
Heat ghee in a wok, add mustard, half tsp Hing, curry leaves, and Haldi.
Once the mustard crackles add the ground paste, three cups of water, salt, and jaggery.
Let it boil for 5-10 minutes. turn off the flame and garnish with chopped coriander leaves.
Serve hot rasam with hot steamed rice or serve as an appetizer
