Ingredients
8 to 10 baby brinjals
3 tsp oil
curry leaves
1 tsp mustard
1 tsp jeera
1 chopped tomato
1/2 tsp tamarind juice
Salt to taste
for masala :
Roast 1 tblsp peanuts,2 tsp sesame seeds,2 tsp cumin seeds,1/4 cup fresh coconut(roast separately)
Grind to a fine paste
Procedure
Wash, slit brinjals,apply little salt and deep fry
To the ground paste add chopped 2 tsp curry leaves,3 tsp chopped coriander leaves,2 tsp chilli powder,1/2 tsp turmeric powder,1 chopped green chilli,5 garlic cloves crushed and 1/2 inch ginger crushed
Take oil in a pan add curry leaves, mustard, cumin seeds, and ground masala and fry well.
Add chopped tomato and fry
Add tamarind juice and deep fried brinjals and salt to taste and make it boil
Garnish with coriander leaves.
