Haiderabadi Baingan Masala





Ingredients

8 to 10 baby brinjals

3 tsp oil

curry leaves

1 tsp mustard

1 tsp jeera

1 chopped tomato

1/2 tsp tamarind juice

Salt to taste

for masala :

Roast 1 tblsp peanuts,2 tsp sesame seeds,2 tsp cumin seeds,1/4 cup fresh coconut(roast separately)

Grind to a fine paste




Procedure

  • Wash, slit brinjals,apply little salt and deep fry

  • To the ground paste add chopped 2 tsp curry leaves,3 tsp chopped coriander leaves,2 tsp chilli powder,1/2 tsp turmeric powder,1 chopped green chilli,5 garlic cloves crushed and 1/2 inch ginger crushed

  • Take oil in a pan add curry leaves, mustard, cumin seeds, and ground masala and fry well.

  • Add chopped tomato and fry

  • Add tamarind juice and deep fried brinjals and salt to taste and make it boil

  • Garnish with coriander leaves.
