Haryali Baby Corn Curry




Ingredients

10 baby corn cut into 4 pieces

3 tsp oil

1 finely chopped onion

1/2 tsp amchur powder

Salt to taste

1 tsp Kasuri methi

Chopped coriander leaves


For the masala paste:

1 onion roughly chopped

4 garlic cloves

1/2 inch ginger

1/4 cup coriander leaves

1/4 capsicum

2 tblsp green peas

1 tsp daniya powder

1 tsp cumin powder

1/2 tsp turmeric powder

1/2 tsp garam masala powder

Roast all the above ingredients in 2 tsp oil and grind into a fine paste





Procedure

  • In a pan heat oil, add baby corn with a little salt and saute for 5 mins or till it becomes tender

  • Remove it from the pan and put it in a bowl

  • In the same pan put chopped onions and saute till transparent

  • Add the masala and fry for 5 mins, add the sauteed corns, salt to taste, little water and cook for 5 mins

  • Add Kasuri methi, amchur powder and chopped coriander leaves, mix well and turn off the flame

  • Serve hot with roti or naan.
