Heerekayi Tambuli/ Ridgegourd Tambuli

Tambli / Thambuli is a type of Raita eaten in the Indian state of Karnataka. Tambuli, being a curd-based cuisine, is consumed with rice. Tambuli is derived from the Kannada word Thampu. Thampu meaning cool/cold. So Tambuli is a cooling food.





Ingredients

1/2 cup chopped ridge gourd/heerekayi/turai

1/2 green chilli

1 tsp jeera/cumin seeds

1/2 tsp oil

3/4 cup coconut gratings

1/2 cup fresh curds

Salt to taste


For the tempering:

2 tsp oil

1 tsp mustard

1 sprig of curry leaves

1 small red chilli

Pinch of hing/ asafoetida powder



Procedure

  • Wash and peel ridge gourd into pieces. Heat 1/2 tsp oil and roast jeera and green chilli, Once it is roasted add chopped ridge gourd pieces, a little salt and saute till it is cooked.

  • Once it is cooked turn off the flame and let it cool.

  • Grind coconut with, roasted, jeera, green chilli, ridge gourd pieces and salt to taste.

  • Make a smooth paste and transfer it into a serving bowl. Add curds to the ground paste, mix well and adjust the consistency as per your taste.

  • Temper with the ingredients mentioned. Serve chilled with hot rice.
