Heerekayi Yennegayi/ Stuffed Ridgegourd

This is the instant method of making stuffed ridge gourd/heerekayi. Usually, we make this in a pan, but this is prepared in a cooker. Very simple and easy method.







Ingredients

2 medium-size ridge gourds/turai/heerekayi

4 tsp oil

1 finely chopped onion

Few curry leaves


For the masala paste:

3 tbsp roasted and powdered dry coconut

3 tbsp roasted and powdered peanuts

1 small finely chopped onion

2 tbsp finely chopped coriander leaves

3 tsp sambar powder

1 tsp coriander powder

1/2 tsp red chilli powder

Salt to taste

1 tsp tamarind paste

1/2 tsp garam masala powder

Pinch of jaggery to taste

1 tsp oil

Mix all these ingredients and make a thick paste. Your stuffing is ready.




Procedure

  • Wash ridge gourds, remove the skin and cut into two-inch pieces.

  • Make + slit on one side. Stuff it with the prepared masala and keep it aside.


  • Heat cooker put oil. Add chopped onions, curry leaves and saute for 5 minutes.

  • Place the stuffed ridge gourd pieces, add 1/2 cup water and the remaining masala

  • Mix well and close the lid of the cooker. cook it for only one whistle.

  • And your curry is ready. Open the lid of the cooker and garnish with chopped coriander leaves.

  • Serve hot with jowar roti or chapathi.
