Huli (sambar) is a gravy consisting of lentil …that too particularly Pigeon Pea/Toor dal and one or more kind of vegetables in which we add this Huli pudi as masala, temper it with ghee/oil, mustard seeds, curry leaves, and hing, and consume it mixed with cooked plain rice. This is considered to be a good, healthy meal as we get to consume fenugreek seeds, curry leaves, turmeric powder, hing, dhania, and lentils every day in a small quantity consistently.

Ingredients
2 cups chana dal/ Bengal gram
1 cup urad dal /skinless split white lentils
4 cups dhaniya seeds/ coriander seeds
1/2 cup jeera/cumin seeds
1/4 cup methi/fenugreek seeds
7-8 cups dry red chillies or depending upon your taste
1 cup kadipatta/ curry leaves
1 tsp hing/asafoetida
Procedure
Dry roast all the above ingredients separately in a pan on a medium flame
Blend all the ingredients into a fine powder
When it comes to room temperature store in an airtight container.
