Vegetable Kurma






Ingredients

1 cup fresh green peas

1 small carrot cut into small cubes

1 potato cut into small cubes

5 tsp oil

1 finely chopped onion

1 finely chopped tomato

1 tsp ginger garlic paste

1/2 tsp turmeric powder

1 tsp red chilli powder

1 tsp garam masala powder

1 tsp Kasuri methi

Salt to taste

Chopped coriander leaves


For the masala paste:

3-4 tblsp freshly grated coconut

8 cashew nuts

Grind these into a fine paste


Procedure

  • Put green peas, chopped potato and chopped carrot with half a cup water and a little salt in the cooker and cook for 2 whistles

  • Heat oil, saute chopped onions till light brown

  • Add chopped tomato, and cook till tomatoes become mushy

  • Add ginger-garlic paste and fry till the raw smell goes

  • Put turmeric pdr, red chilli pdr, garam masala pdr, and saute for 5 mins

  • Add the ground masala paste and fry well for 5 mins

  • Add the cooked veggies,salt , Kasuri methi and water, adjust the consistency according to your taste

  • Let it boil for 5 mins, check for salt

  • Garnish with chopped coriander leaves and serve hot with idiyappam or chapathi, naan or poori.

  • Enjoy with idiyappam, poori or chapati.
