Jolada Usli/Sweet Corn Stir fry




Ingredients


1 cup Jola / sweet corn kernels( boiled)

3 tsp oil

1 tsp mustard

1/4 tsp cumin seeds/jeera

1 sprig curry leaf

1 broked red chilli

Pinch of hing/ asafoetida

1 tsp lemon juice

2 tbsp chopped coriander leaves

Salt to taste


Ingredients to make paste:

1/4cup grated fresh coconut

1 or 2 green chillies

Coarsely grind the above ingredients without water



Procedure

  • Heat oil in a Kadai, add mustard, once it crackles add curry leaves,red chili bits,hing, jeera and fry for a second

  • Add the coconut paste, and saute for a minute

  • now drop in the boiled corn kernels, salt to taste, and toss well

  • Check for the salt, garnish with chopped coriander leaves and lemon juice and turn off the flame

  • And your jolada usli is ready to serve with rice and dal.
