Kaarate / Bittergourd Sukke

Sukke is a typical GSB Konkani style side dish for rice. Veggies are cooked in a spicy coconut masala to make a dry, delicious side dish called Sukke. Veggies are usually used in combinations. Beans & potatoes, potatoes & cabbage, Mixed veggies and so on. In this recipe, I have used Bittergourd/ karela.



Ingredients

2 bittergourds / kaarate / karela / hagalkaayi

Salt to taste

Jaggery to taste


For the masala paste:

3/4 cup grated coconut

chickpea size tamarind

2 tsp urad dal,1/2 tsp coriander seeds and 5 red chillies roasted in 1/2 tsp oil

Grind the above into a semi coarse masala paste adding water and keep aside




Procedure

  • Wash bitter gourds, scrape the outer skin little and cut lengthwise into two, cut into slices

  • Add salt and mix well. Keep covered for 30 mins, Squeeze water from the bitter gourds and cook n cooker for 2 whistles with 1/2 cup water

  • Transfer the cooked bitter gourd to a Kadai ( Discard the water)

  • Add the ground masala, salt and jaggery,1/2 cup water, mix well and let it boil

  • Add the tempering with the ingredients mentioned

  • Serve with rice and dal.
