Ingredients
1 big kaarate/ hagalkayi/ bittergourd/ karela
2- 3 slit green chillies
1/2 tsp turmeric powder
1 tsp red chilli powder
1 sprig of curry leaves
2 tsp urad dal
1 tsp mustard
4 tsp oil
Jaggery to taste
1 tsp tamarind paste
Salt to taste
1/2 cup fresh coconut gratings
Procedure
Wash and scrape the karela, cut into 4 pieces (lengthwise) and chop it into thin slices
Apply little salt and keep for 20 mins
Squeeze water from karela and cook it in a cooker with slit green chillies, turmeric powder, salt, tamarind and 1/2 cup water
Cook it for 1 whistle
In a pan heat oil, add mustard.Once it crackles add curry leaves ,urad dal and fry till dal becomes light brown
Add red chilli powder, saute for a second, add cooked karela, jaggery and cook for some time
Now add the coconut gratings and cook until it becomes dry
Serve with rice and dal
