Kaashi Halva


Kaashi halva is a yummy dessert/halva prepared with ash gourd/kumbalkaayi. This halva is very popular in Udupi and Mangalore.





Ingredients


3 Cups grated ash gourd

1 1/2 cups sugar

1/2 cup ghee

little saffron color

2 tsp cardamom powder

Almonds, raisins, and cashew nuts chopped and roasted in ghee.




Procedure

  • Pressure cook the grated ash gourd in cooker for 2 whistles with its water

  • Transfer it to a Kadai, add sugar and cook till the excess water evaporates

  • Add ghee and cook further till you get the halva consistency

  • Add nuts, saffron color, and cardamom powder, and serve hot.
