Khaali meaning ’empty’ in Kannada, Khaali dosas do not have any filling in them like masala dosas. Light and fluffy dosas served with chutney, sambar, or any curries, simply one of the best breakfasts.
Ingredients
1 cup dosa rice
1 fistful urad dal
1 fistful thick poha / beaten rice / avalakki
1 tsp chana dal / Bengal gram dal
1 tsp methi/fenugreek seeds
Salt to taste
Pinch of sugar and cooking soda
Oil or ghee for cooking dosa
Procedure
Wash rice, urad dal. chana dal, methi seeds, and poha well, and soak in water for 5-6 hours.
Grind into a smooth batter. Let the batter ferment for 7-8 hours.
Before making dosa, add salt, sugar, and cooking soda. Mix the batter well.
Add water and adjust the consistency of the batter.
Heat dosa pan, take a ladle full of batter, and spread slightly thick dosa.
Drizzle with a spoon of oil. Once it is cooked, flip the dosa and cook the other side.
Serve hot dosa with chutney, sambar, or any curries of your choice.
