This is a Maharashtrian term for salad. This cucumber salad or Kakdi chi koshimbir is very popular as it is very refreshing and cooling and can be made very quickly and easily.
Ingredients
1 cucumber/kakdi
2-3 tsp roasted and crushed peanuts
2 tbsp fresh coconut gratings
2 tbsp chopped coriander leaves/dhaniya pattha
Salt to taste
Sugar to taste (pinch)
1 tsp lemon juice
For the tempering:
2 tsp oil
1 tsp mustard
Curry leaves/kadi pattha
1 tsp cumin seeds/ jeera
2 chopped green chillies
Procedure
Wash and peel cucumber, cut the ends and chop finely.
Add roasted peanut powder, salt, sugar, coconut gratings, lemon juice, and coriander leaves.
Mix everything well.
Heat oil, add mustard, once it starts crackling add curry leaves, green chillies and jeera.
Fry for 2 minutes, add this tadka to the prepared salad and give a mix.
And your khamang kakdi is ready to serve. You can have this as a salad or a side dish.
