Khara Pongal / Ven Pongal

Pongal or Huggi is a popular South Indian rice dish. In Tamil "Pongal" means "bubbling up". In Telugu and Kannada, Pongal is a dish of rice mixed with boiled milk and sugar. Huggi is derived from the Old Kannada word Puggi meaning "bubbled up, ballooned".




Ingredients

1/2 cup sona masoori rice

1/4 cup Moong dal

2-3 cups water

2 tblsp ghee or oil

1 tsp mustard

6 cashew nuts

Pinch of hing/ asafoetida

1/2 tsp pepper slightly crushed

2 green chillies

2 tsp jeera/ cumin seeds

1/2 inch ginger chopped

1/2 tsp turmeric powder

Curry leaves

Salt to taste

chopped coriander leaves




Procedure

  • Wash rice, dal and keep aside

  • In cooker put ghee/oil add mustard, once it crackles add curry leaves and cashew nuts

  • Fry for a second, add green chillies , ginger chopped, turmeric powder, thing, pepper, jeera and saute for a second

  • Add rice and dal mixture, roast for 5 mins

  • Add salt and water, mix properly and close the lid of the cooker

  • Cook it for 3 whistles and turn off the flame

  • once the steam is released, open the lid, check for salt, add chopped coriander leaves and mix well

  • Serve hot drizzled with ghee and pickle.
