Khasta Poori is a deep-fried, puffed bread, quite popular in Northern India. “Khasta” in Hindi means “flaky”. This crisp, flaky texture poori makes a great accompaniment to many Indian dishes. Typically, this khasta poori is served with some potato curry or any sauce based curries.
Ingredients
3/4 cup maida/all-purpose flour
1/4 cup wheat flour
1 tsp crushed black pepper
1 tsp ajwain
2 tsp Kasuri methi
1/2 tsp hing/asafoetida pdr
1/4 tsp turmeric powder
Salt to taste
2 tbsp hot oil +oil for deep frying
Procedure
Mix all the dry ingredients from no 1 to no 8
Add hot oil and mix well
Put water and knead a hard dough
Divide the dough into small portions and make balls
Roll each ball into thin pooris and smear it with little oil and sprinkle little flour on it
Fold the poori into a triangle, press the side and deep fry into crisp khasta pooris
Enjoy with coffee or chai.
