Khasta Poori

Khasta Poori is a deep-fried, puffed bread, quite popular in Northern India. “Khasta” in Hindi means “flaky”. This crisp, flaky texture poori makes a great accompaniment to many Indian dishes. Typically, this khasta poori is served with some potato curry or any sauce based curries.





Ingredients

3/4 cup maida/all-purpose flour

1/4 cup wheat flour

1 tsp crushed black pepper

1 tsp ajwain

2 tsp Kasuri methi

1/2 tsp hing/asafoetida pdr

1/4 tsp turmeric powder

Salt to taste

2 tbsp hot oil +oil for deep frying




Procedure

  • Mix all the dry ingredients from no 1 to no 8

  • Add hot oil and mix well

  • Put water and knead a hard dough

  • Divide the dough into small portions and make balls

  • Roll each ball into thin pooris and smear it with little oil and sprinkle little flour on it

  • Fold the poori into a triangle, press the side and deep fry into crisp khasta pooris

  • Enjoy with coffee or chai.
