Kudutha Chutney/Horsegram Chutney

This Chutney goes well with hot rice, rasam, or congee/Ganji. This is very popular in Tulunaadu/Mangaluru, Dakshin Kannada .

This bean Chutney is rich in Iron content and is very good for health. In addition, it has the ability to lower blood sugar, helping to reduce insulin resistance in type 2 diabetics.







Ingredients

1/4 cup horsegram/huruli kaalu/kudu

1/4 cup fresh coconut gratings

Salt to taste

Chickpea size tamarind

1/2 tsp dhaniya/coriander seeds

1/4 tsp jeera/cumin seeds

4 garlic cloves

3 dry red chillies

1/2 tsp+2 tsp oil

1 tsp mustard

Few curry leaves




Procedure

  • Dry roast horsegram till the colour changes and it becomes crisp. Transfer it into a bowl.

  • Put 1/2 tsp oil in the same pan,add daniya,jeera,garlic and red chillies. Roast till it becomes golden brown and fragrant. Transfer it into the bowl with horsegram.

  • Put coconut gratings in the pan and slightly roast it for 5 minutes and turn off the flame.

  • Once the roasted ingredients comes to room temperature, firstly grind horsegram with roasted spices and tamarind.

  • Once it is ground add the coconut gratings,salt to taste and grind.

  • Add little water only if required. Transfer the ground chutney into a bowl and temper with mustard and curry leaves.

  • Serve with hot rice and rasam or congee/ganji.
