Kuvale Sasam / Ashgourd Curry

Kuvale means Ashgourd in Konkani. Sasam means mustard seeds. This dish is prepared by cooking ash gourd in a coconut-based masala containing mustard seeds, hence called kuvale sasam.


Ingredients


25o gms kuvale/ ashgourd

Salt to taste


For the masala paste:

1 cup fresh grated coconut

1/2 tsp mustard

1 red chilli roasted in little oil

Little tamarind

Grind the above ingredients into a paste (no need to make a fine paste)


For the tempering:

3 tsp oil

1 tsp mustard

3-4 methi seeds

Curry leaves




Procedure

  • Remove the skin of ashgourd and cut into medium chunks ,cook with 1/2 cup water and salt in cooker for 2 whistles

  • Transfer the cooked ashgourd in a vessel,add the masala and water if needed and adjust the consistency

  • Make it boil and temper with the mentioned ingredients

  • Serve hot with white rice and dal or rasam !!!
